Chia puddings fit perfectly in that category of healthy breakfast/dessert. What about adding some fresh mango to have a delicious tropical flavor?
- 1 cup coconut milk
- 3 tbsp Zola Foods chia seeds
- 2 cups chopped mango
- 2 tbsp pure maple syrup
To prepare it, blend the mangos into a purée. Then add chia seeds, coconut milk, maple syrup, and the mango purée to a mixing bowl and stir it together until smooth.
Place it in the fridge for a couple of hours or preferrably leave it overnight. Top with some chunks of fresh mango to serve.
